Italian cuisine - Italy is a country of great variety, and Italian cuisine is just another aspect of the diversity that the Italian culture boasts of. Divided for a long time into many duchies, princedoms, kingdoms, and states—often hostile to one another—political unification in Italy did not occur until 1861. And that’s probably the reason why Italian cuisine is diversified.

Not only does each region display its own style, but each community and each valley has a unique way of cooking as well. A traditional Italian meal starts with “antipasto”, which translates into English as before the meal. Then comes the “primo,” the first course. It usually consists of a hot dish like pasta, soup, rice, and polenta. There are usually abundant vegetarian options. After the first course, it's time for the main course called “secondo”, or second course. Chicken, meat, or fish are the usual options. Pasta is never the main course in a traditional menu. Main course is accompanied by side dish called “contorno”. Side dish may consist of a salad or vegetables. A “dolce”, or sweet, ends a traditional Italian meal. Usually the dolce consists of a bowl of fruit. Some hard Italian cookies, called biscotti, and liquors like (grappa, amaro, limoncello) are other options.

Mexican cuisine – The country of Mexico boasts of some rich and spicy dishes. Mexican cuisine is known throughout the world for its rich and varied flavors, colorful decoration, and its variety of spices. It’s surprising to know that each region in México has a distinct culinary art. In central México you'll find a blended cuisine that has tastes of Aztec and Spanish. For instance "mole poblano", a thick, dark sauce made with dried chilies, seeds, spices, cocoa, nuts and other ingredients, is the typical central Mexican cuisine. Southern México, with its variety of dried peppers, is world known for its herbed stews and sauces. Along the Pacific Coast seafood garnished with tomatoes and herbs followed by rich coffee is the typical food. And in the Yucatán Península, traditional dinner consists of a Mayan delicacy like "pork pibil" cooked in banana leaves with the famed "achiote" sauce.
