Nankhatai. It is a very popular Indian biscuit (cookie). It’s so easy to make at home, with only handful of ingredients,
And it just melts in your mouth!
- 1 cup all purpose flour or maida
- 1/2 cup besan
- 2 1/2 tbs sooji or semolina
- Pinch of salt
- 1/2 cup desi ghee slightly melted
- 12 cup powdered sugar
- 1/2 teaspoon cardamom powder
- Chopped pistachios to garnish
- chopped almonds to garnish
In a bowl add Maida ,Besan ,Sooji, powdered sugar,cardamom powder and salt and mix well.
Pour in the ghee and gently mix to make a dough.
Go not mix the dough for long
Shape into small balls
Chop nuts and keep aside
Take a small dough of mix and gently press over chopped nuts
Place these cookies over parchment baking sheet
Preheat the oven or OTG for about 15-20 mins.
Bake the cookies at 180degree C for 15 -18 mins
Check the cookies
If the bottom is browned ,then Nankhatai are ready.
It will harden as it cools.
Serve with hot cup
