Apple Cake with Hot Caramel Sauce
Ingredients
1/2 cup pecans
1 cup sugar
1/2 cup butter
2 eggs
1 teaspoon baking soda
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground nutmeg
1 teaspoon ground cinnamon
apples, peeled, cored and finely chopped
Hot Caramel Sauce:
Ingredients
1 cup packed light brown sugar
1/2 cup unsalted butter
1/2 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1/2 cup evaporated milk
Method:
Preheat the oven to 350 degrees F. Grease a round cake pan. Grind the pecans in a blender or food processor. In a large bowl, mix the butter and sugar together until fluffy. Add the eggs to it and beat until well blended. In a bowl, stir the flour, baking soda, nutmeg, salt and cinnamon. Whip the dry mixture into the wet mixture until blended. Fold the apples and nuts in until they are properly mixed. Put the batter into the pan and smooth the top. Bake for 50 minutes and let it cool on a wire rack for 15 minutes, then remove from the pan.
Method to Make the Sauce: In a small pan, melt the butter with the brown sugar and salt over medium heat. Bring to a boil. Remove from heat and whip in the vanilla and milk. Let the sauce cool and store in an airtight container in the refrigerator for up to 3 days.
Chocolate Cheesecake
Ingredients:
1/3 cup melted butter
8 1/2 ounces chocolate wafer crumbs
1/4 teaspoon ground nutmeg
3 large eggs
2 cups semisweet chocolate chips
1 cup grained sugar
3 (8-ounce) packages of, softened cream cheese
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup sour cream
1 cup whipped cream
Directions:
Crush the chocolate wafer crumbs, in a blender or food processor until it becomes fine. Mix 2 tablespoons of sugar and nutmeg with melted butter and blend well and place evenly all over the cake pan. Let it Chill. After that, mix1cup sugar and eggs in a mixer bowl and continue beating until it's thick and light. Put in softened cream cheese into the prepared mixture and beat the mixture until it is smooth. Melt the semisweet chocolate chips in a double boiler placed over hot water. And let it cool. Blend the cream cheese paste with vanilla, sour cream and salt and pour this mixture into the prepared pan. Bake at 325°F (160°C) for 1hour. Place the pan on a wire rack and wait until it is cooled. Whip cream with powdered sugar until its thick. Take out the cake from the pan and spread the prepared mixture over the cheesecake.
