Chicken Breasts Baked on Mushroom Caps
Ingredients:
6 large portobello mushrooms or 14 to 18 large button or shiitake mushrooms, wiped clean Or cut into 1/4-inch-thick slices
6-7 bone-in or boneless chicken breast halves (with skin)
1 teaspoon dried thyme
Salt and ground black pepper to taste
2 cups dry white wine
2 tablespoon minced garlic
2 cups dry white wine
Olive oil
For Sauce
Ingredients:
Chicken Stock 1 cup or you can also use water
1/2 to 1 cup heavy cream (optional)
2 tablespoons minced fresh parsley (optional)
Method: Place a rack in the center of the oven. Preheat the oven to 400 degrees F.
Trim excess fat from chicken. Marinate the chicken with thyme, and salt and ground black pepper to taste. Lightly oil a baking pan or shallow baking dish large enough to place the chicken pieces in a single layer. Take away the stems from mushrooms. Put the mushrooms in the pan. Sprinkle with garlic, salt and ground black pepper to taste. Pour white wine over the mushrooms. Now place lightly the chicken breasts skin side up on top of the mushrooms. Sauté lightly with olive oil. Then, bake till the chicken skin turns golden brown. Check to see that the pan is wet; if not, add more wine. Baste the chicken pieces with pan juices and turn the chunks over. Bake until the chicken is stiffened and fully cooked.
Steak Pizzaiola
Ingredients:
3-4 tablespoons olive oil
1/2 cup dry red wine
One 3-pound steak about 1 inch thick
One 28-ounce can crushed tomatoes and their juice
1 teaspoon dried oregano, crumbled
4 cloves of garlic, minced (1 tablespoon)
1 teaspoon each salt and black pepper (to taste)
3 tablespoons grated Parmesan or Romano cheese (optional)
Method : Heat the oil over medium-high heat in a skillet large enough to hold steak. Season the steak with black pepper and salt on both sides. Brown the steak on one side for 3-4 minutes, flip, and brown an additional 3 minutes on second side. Place the steak to a plate. Lower heat to medium. Add peppers or onions, add to part and cook for 3-4 minutes, stirring. Pour the wine to the skillet and wisp up any bits from the bottom of the pan. Put garlic, tomatoes and juice, salt and pepper, oregano to taste. Cook for 15 minutes, stir occasionally, until mixture starts to thicken. If you want to add mushrooms or black olives, add after 10 minutes. Place steak into the pan. Cook until steak is heated and cooked to your taste. Change seasoning of tomato sauce to your taste. Place steak to a carving board and cut in serving pieces. Serve the steak with tomato sauce and additional sauce on the side, toss 1 cup of the sauce with 1 pound cooked and drained pasta of your choice.
