Strawberry & Cream Sandwich Sponge

Named after Queen Victoria, Strawberry & cream sandwich sponge is a classic and delicious cake. The cake is easy to make and will surely create and impression on your guests.

Ingredients:
  • 3 to 4 slices slightly buttered bread
  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • 1 splash of milk
  • 225 g white caster sugar
  • 1 teaspoon vanilla extract
  • 4 large free-range eggs
  • 200 ml double cream
  • 1 vanilla pod
  • 1½ tablespoon of icing sugar , plus extra for dusting
  • 250 g fresh strawberries
Method:
  • The first step in the preparation of the cake is to turn the oven to some 180ºC. Now take two sandwich tins of 20cm and grease and line their bases.

  • Now, cube up the butter. After this, cream up the butter, along with sugar in a mixing bowl. Do this until it becomes pale and fluffy. Thereafter, mix it in vanilla extract.
  • Take eggs and beat them. Then slowly mix them into the sugar and the creamed butter. Sift the mixture. Thereafter fold in the baking powder, around ¼ of a teaspoon of sea salt and flour with a spoon.
  • Loosen the batter by stirring in one splash of milk. Take the two tins and divide the batter evenly between them.
  • Now, put them in the oven and bake the cakes for some 22 to 25 minutes. Do this until they are cooked thoroughly and become golden. You can also check whether it has been properly done by putting a pin in the middle of the cake. After you take out the pin see whether it is clean or has some traces of the cake on it. If it is clean then it is done. Now, put the cake away for five minutes so that it cools down.
  • Now that the cake the completely cooled, take a large bowl and pour cream into it. Thereafter scrape in the vanilla seeds. Mix it until you get soft peaks.
  • Once you are done sift in the icing sugar. Thereafter carefully fold. Now take a plate and put a cake on it. Spread the vanilla cream over it.
  • Beautify it with a few sliced strawberries and also icing sugar. The cake is now ready to be served.

Quiche Leekraine

Quiche leekraine is a fabulous dish which is easy to make.

  • 75 g Cheddar cheese
  • 3 large free-range eggs
  • 300 g leeks
  • olive oil
  • 3 slices of higher-welfare smoked streaky bacon
  • 250 ml milk
  • precooked pastry case
  • green salad , to serve
Method:
  • The first step in the preparation of this delicious dish is to turn on the oven to 180ºC.

  • Now take the leeks and finely slice them. Thereafter you need to sautée the leeks with a splash of oil and this needs to be done till they become soft and sticky.
  • Take a bacon and chop it. Now take a pan and fry the bacon into it until it becomes golden. The cheese also needs to be gated.
  • The eggs need to be whisked together. Thereafter they should be stirred through the milk, bacon, leeks, cheese, and obviously, a nice pinch of seasoning.
  • Once it is done, take a pastry case and put it on a baking sheet. Thereafter the mixture should be poured in the case. Bake it fro approximately 25 to 30 minutes.
  • Now, the dish is ready to be served. Do remember to serve the tempting dish along with green salad.

Vegetable Tartlets

A mouth-watering dish which would add more fun to your day.

  • 1 handful of mixed, ripe cherry tomatoes
  • 8 asparagus spears
  • 4 baby courgettes
  • 2-3 jarred roasted peppers
  • ½ a bunch of fresh basil
  • 1 x 500 g block of puff pastry
  • plain flour
  • 4 teaspoons pesto
  • olive oil
  • 8 black olives , optional
  • 1 x 100 g ball mozzarella
  • 20 g Parmesan cheese , optional
Method:
  • First of all preheat the oven to 200ºC. Take a table knife and cut the pastry block into half. Take the other half of the pastry block and wrap it up. Put it in the fridge for later use.

  • Spread some flour on the surface and put the pastry on it. Roll out the pastry into the form of a square with the help of a rolling pin. Once this is done, even slice the pastry into four equal squares.
  • Take a baking tray and put the pastry squares on it.
  • Now spread each square's center with presto with the help of a spoon.
  • Take some tomatoes and squash them into a bowl. Thereafter, the asparagus spears need to be snapped into 3 cm pieces.
  • Meticulously shred the courgettes into ribbons with the help of a speed peeler. Thereafter, tear the roasted peppers into strips. Now add these to the bowl.
  • Put large basil leaves in the bowl.
  • The vegetables need to be mixed in the bowl. But do remember to add a splash of oil. A little of the mixture should be put on each tart that has been smeared with pesto and top it with two olives.
  • Take mozzarella and break it up. Put small amounts of it on each tart. Now you can grate some Parmesan.
  • Bake it approximately for some 15 to 20 minutes. Do this until the pastry becomes golden.
  • The tarts are now ready; however, give them some time so that they cool down. Sprinkle the reserved basil leaves on top of them. The tarts are now ready to be served.

Egg And Bacon Soufflé

Ingredients:
  • 3 to 4 slices slightly buttered bread
  • 4 to 6 slices bacon, diced
  • 3 to 4 eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 cup milk
  • 1/4 teaspoon ground paprika
Method:

Fry the bacons till they are browned. Cut bread into smaller pieces. Lightly butter a deep casserole (1-quart size). Make layers of bread pieces and bacon. Whip together the eggs, milk, salt, mustard, and paprika. Pour the mixture over bread and bacon and place it in the casserole. Bake at 350° for about 40 minutes.

Cheese Sticks

Ingredients:
  • 1 cup flour
  • 1/8 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 1 to 2 teaspoons baking powder
  • 4 tablespoons butter or margarine
  • 1/2 cup shredded Cheddar cheese
  • 3 tablespoons sour cream
Method:

Firstly chill the cheese for one and a half hour. Remove the chilled cheese and cut into 1" thick strips just before cooking. Mix the dry ingredients; add corn meal and flour, salt, egg and add buttermilk. Dip cheese sticks into the prepared batter. Place the sticks in a pan of hot oil. When the sticks are browned evenly remove and immediately roll in grated cheese.

Cold Pasta and Chicken Salad

Ingredients:
  • 8 oz. vermicelli pasta noodles
  • 10 fresh sliced mushrooms
  • 1 c. French dressing
  • Ripe olives (sliced)
  • 1 c. fresh broccoli florets, blanched
  • 10 slices cherry tomatoes
  • 1/3 c. fresh basil (or 1 1/2 teaspoon dried)
  • 1 can sliced artichoke hearts
  • 2 c. cooked cubed chicken
  • 1/3 c. toasted pine nuts, optional
Method:

Firstly cook the pasta and then transfer to mixing bowl. Put 1/3 of the French dressing to the bowl and toss well. Put the bowl in freezer for 3 hours. In another bowl, place mushrooms, broccoli, tomatoes, olives, artichokes with remaining dressing. Chill the mixture. Add chicken, basil, nuts. Mix with pasta.

Chocolate Muffin Recipe

Ingredients:
  • 2 to 3 large eggs
  • 1/2 cup of sugar.
  • 2/3 cup of baking cocoa.
  • 2 cups of flour.
  • 1 teaspoon of vanilla
  • 1 cup of chocolate chips.
  • 2 teaspoons of baking soda.
  • 1 to 1 ½ cups of milk.
  • 1/3 cup of vegetable oil.
  • 1/2 teaspoon of salt.
Method:

Preheat your oven to 400°F. Then use non-stick cooking spray to coat muffin tins. In a large bowl, mix the flour, sugar, cocoa, baking soda, salt and vanilla. Stir in half a cup of chocolate chips. Take another bowl and whip the eggs in it. Then pour some milk into the beaten eggs. Pour the egg/milk mixture to the other ingredients until moistened. Scoop the batter evenly into the coated muffin tins. You can sprinkle the remaining chocolate chips. Bake for about twenty minutes. Cool on a wire rack before removing from the pan.

Chicken Spaghetti Recipe

Ingredients:
  • 1 lb of chicken breast.
  • 1 lb of Velveeta cheese.
  • 1 lb of spaghetti pasta.
  • 1 can of cream of chicken soup.
  • 1 can of tomatoes.
  • Salt according to taste.
Method:

Firstly boil the chicken breast in water. When cooked, remove the chicken. Cook the pasta in the water, when cooked drain it. Cut the chicken into smaller pieces. Cut the cheese into small pieces and melt it in a pan with the cream of chicken soup. Mix everything in a large pan. Heat for about 3 minutes. And then serve.
