Best Mexican Food Recipes
The traditional Chiles En Nogada recipe: This is one of the top Mexican foods, which is traditionally prepared by many on Mexican Independence Day. That’s because it comprises green chile, red pomegranate, and white walnut sauce. These colors are part of the national flag as well.
6 large green chilies, for stuffing
1 pomegranate, seeds separated
1/2 lb ground pork or beef
3/4 cup sour cream
1/2 cup finely chopped walnuts
1/2 teaspoon sugar
1/4 cup evaporated milk
3 garlic cloves
1 tablespoon vegetable oil
1 apple, peeled, cored and seeded, and chopped
1/4 of an onion, peeled and diced
1/4 teaspoon cinnamon
A pinch of nutmeg
1/4 teaspoon cumin
1 bunch fresh parsley, coarsely chopped
2 tablespoons raisins, softened in warm water
2 tablespoons unsalted almonds, chopped
Roast the chilies and get rid of their skins and seeds.
Heat vegetable oil in a saucepan. Apply medium heat only.
Add the beef or pork into the saucepan and continue heating till it turns brown.
Add onions, nutmeg, and almonds into the saucepan.
Put garlic and cinnamon into the pan.
Also, add the apple pieces, salt, pepper, and cumin.
Cook the above mixture for 5 minutes.
Beat the egg whites to form stiff peaks with the help of a whisk.
Fold the egg yolks and add a pinch of salt.
Dip the chilies into the above mixture of eggs.
Fry the above mixture till it turns golden brown.
Stuff the chilies with equal amounts of the mixture.
Mix the sour cream, sugar, and walnuts.
Add the mixture into the evaporated milk.
Pour the above mixture over cooked chilies.
Sprinkle pomegranate seeds over the mixture before you serve the recipe.
Creamy Chicken Enchiladas: This is one of the best Mexican foods you can prepare in much less time and serve it to your dear ones and friends.
1 can cream of chicken soup
2 cups chicken, cooked and cubed
1 cup sour cream
10 flour tortillas
10 ounce diced tomatoes with mild green chilies (undrained)
2 cups shredded cheese
Mix green chilies and chicken soup.
Add 1 and 1/2 cups shredded cheese and sour cream to the above mixture.
Put 1/3rd part of the above mixture in a bowl.
Add chicken to the remaining mixture.
Fill each tortilla shell with a spoonful of chicken and soup mixture.
Apply grease on a saucepan and put the stuffed tortillas in it, one by one.
Top with the 1/3rd soup mixture.
Sprinkle the remaining cheese over the tortillas.
Bake at 350° for half an hour or more, until the ingredients are completely heated.
Tres Leches (Milk Cake): This is a great Mexican food prepared for dessert. It is made of different types of milk used for filling and topping.
1 teaspoon baking powder
2 cups white sugar
1 and 1/2 cups all-purpose flour
1 and 1/2 teaspoons vanilla extract
1/2 cup unsalted butter
2 cups whole milk
12 fluid ounce evaporated milk
14 ounce sweetened condensed milk
1 and 1/2 cups heavy whipping cream
Heat the oven until 350° and apply grease and flour on a baking pan (9x13 inch).
Sift baking powder and flour and keep them away.
Combine butter with 1 cup white sugar until you get a fluffy mixture.
Add eggs into the above mixture.
Put 1/2 teaspoon vanilla extract into the mixture and mix well.
Add 2 tablespoons of the flour mixture to the butter mixture at a time and blend the two.
Pour the batter (flour and butter mixture) into the baking pan.
Bake at 350° F for half an hour.
Pierce the cake with a fork frequently to see whether it is baked properly.
Let the cake cool after it is baked.
Mix the whole milk, evaporated milk, and condensed milk together.
Pour the combined milk on top of the cake.
Combine the remaining 1 cup sugar, vanilla extract, and whipping cream until the mixture turns thick.
Top the cake with the mixture.

Texas Mexican Food
The Tex-Mex or Texas Mexican cuisine is a localized version of the Mexican recipes, as available in Texas. 2 beef flank steaks (1 pound each)
1 medium sized onion, chopped
4 ounces chopped green chilies
2 envelopes taco seasoning
10 flour tortillas (8 inches), warmed
1 tablespoon white vinegar
3/4 cup sour cream
1 and 1/2 cups chopped seeded plum tomatoes
1 and 1/2 cups (6 ounces) shredded Monterey Jack cheese
Divide the steaks into halves and apply taco seasoning.
Place the steaks in a slow cooker before coating the latter with cooking spray.
Top the steaks with onion and chilies.
Add vinegar as well.
Cover the steaks and cook over low heat until the meat becomes soft.
Remove the steaks and let them cool.
Use forks to shred meat.
Heat it in a slow cooker.
With a spoon, put down 1/2 cup of the meat mixture into the center of the tortillas, one by one.
Top them with cheese and sour cream.
Also, use tomato to top the food item prepared.
Fold the ends and sides of the tortillas once they are stuffed and topped.
Mexican Food in Dallas

1 and 1/2 cups self-rising cornmeal
8 ounce sour cream
1 medium-sized onion, chopped
1 jalapeno pepper, chopped
8 and 1/2 ounce creamed corn
1/2 cup canola oil
Preheat the oven until the temperature rises to 425° F.
Combine all the ingredients in a large saucepan.
Apply grease on an iron skillet.

2 lbs ground beef
2 cloves minced garlic
3 cups tomato sauce

8 ounces sliced Monterey Jack cheese
2 cups small curd cottage cheese
1/2 cup sliced black olives (can also be used to garnish the recipe)
12 corn tortillas, quartered
2 tablespoons chili powder
1 cup grated cheddar cheese
Chopped green onion (optional)
Extra sliced black olives (optional)
Sour cream (optional)
Preheat an oven till the temperature rises to 350°.
Apply grease on a casserole dish set aside.
Saute beef with onion and garlic in a skillet, and apply medium heat.
Drain the mixture.
Sprinkle chili powder over the beef and mix properly.
Add tomato sauce, olives, and green chilies.
Also, add sugar and salt to the above mixture.
Apply very low heat and let the mixture simmer for 15 minutes.
Blend the egg with cottage cheese.
Place 1/3 part of beef on the casserole dish and layer it with half part of Monterey Jack cheese and half of egg and cottage cheese mixture.
Use half the tortillas to create the next layer on beef.
Place 1/3 part of beef on top of the tortillas.
Continue to create layers by using the remaining tortillas, Monterey Jack cheese, and beef.
Top the layers by sprinkling cheddar cheese.
Bake at 350° until you have heated the layers completely.
Check if the cheese has melted, and then serve the recipe with sour cream, green onions, and black olives.
