Directions:
  • Preheat the oven till 300 degrees.
  • Line a baking sheet with the help of parchment paper.
  • Beat the egg whites and salt at high speed.
  • Add sugar and lemon juice to the above mixture and whisk.
  • Sift the cocoa powder into one side of the bowl and fold it into the meringue. You may use a plastic spatula to do so.
  • Spread the meringue onto the baking sheet in an oval shape.
  • Bake the meringue for more than an hour.
  • Switch off the oven but don’t open its door.
  • Let the Pavlova remain on the oven for an hour and then set it aside.
  • To create the topping, whisk the cream into stiff peaks and sprinkle on top of the Pavlova.
  • Add shaved chocolate and raspberries.
  • Drizzle some chocolate to complete the topping.

For the coffee syrup:
  • 1 tablespoon coffee powder

  • 1 1/2 cups whole milk
  • 1 teaspoon ground cinnamon

  • 2 cups sugar

  • 2 large eggs
  • 1/2 cup (1 stick) unsalted butter (room temperature)
  • 2 cups all purpose flour
Directions:

To prepare the coffee syrup:
  • Combine the ingredients in a saucepan.
  • Stir the ingredients at low heat so as to dissolve the sugar and coffee.
  • Let the mixture cool for some time.
To prepare the cake:
  • Place the rack at the central part of the oven and preheat up to 350°F.
  • Apply butter over the cake pans.
  • Place waxed paper and butter paper on the bottom of the cake pans.
  • Pour flour on the cake pans.
  • Stir chocolate on top of the double boiler. Boil the chocolate so as to melt it.
  • Remove the chocolate from the boiling water.
  • Add flour and baking powder in a medium sized saucepan.
  • Add cinnamon and sprinkle salt into the mixture of flour and baking powder.
  • Add coffee powder and milk in another saucepan and let them dissolve completely.
  • Whisk sugar and butter in a saucepan placed over an electric mixer. Let them mix well.
  • Beat the eggs one by one and add them into melted chocolate and vanilla extract mixture.
  • Pour milk in 3 separate pans, and add dry ingredients.
  • Bake the cakes until the tester placed into the central part comes out just clear.
  • Keep the cakes in pans placed on racks and let them cool for 10 minutes.
  • Take the cakes out of the pans and cool them completely.
  • Cut the cakes into several pieces as required.
  • Apply 2 tablespoons of syrup over each piece of cake. Also, add 3/4 cup frosting to the cake.
  • Repeat the above step to form 2 layers of syrup and frosting.
