Recipe for Apple Cinnamon Pancake

Ingredients:
  • 2 cups biscuit mix
  • 1 scant teaspoon ground cinnamon
  • 1 egg
  • 1 1/3 cups milk
  • 3/4 cup grated apples, about 2 medium apples
  • Cider Syrup:
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 cups apple cider
  • 2 tablespoons lemon juice
  • 3 tablespoons butter

    Method:
    1. To make this mother’s day recipe, combine biscuit mix, cinnamon, egg and milk. Beat until smooth and stir in grated apples.
    2. Grease large skillet or griddle and heat over medium heat. Pour batter, about 1/4 cup for each pancake, onto hot griddle.
    3. Bake until bubbles appear around the edges, turn and bake other side until golden brown.
    4. Now serve with warm cider syrup. Your apple sauce topping pancakes are ready

    For Making the Sauce
    In saucepan, mix sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice. Now cook over medium heat, stirring constantly, until mixture thickens and begins to boil. Continue to boil, stirring, for 1 minute. Remove from heat and stir in butter. Makes about 2 1/2 cups of syrup.




    Recipe for Dessert Crepes

    Ingredients:
  • 4 eggs, lightly beaten
  • 1 1/3 cups milk
  • 2 tablespoons butter, melted
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1/2 teaspoon salt

    Method:
    1. In a large bowl, whip together eggs, milk, melted butter, flour sugar and salt to a smooth paste.
    2. Heat a medium-sized skillet or crepe pan over medium heat. Grease pan with a small amount of butter or oil.
    3. Using a serving spoon put about 3 tablespoons crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. Cook over medium heat, 1 to 2 minutes on a side, or until golden brown. Serve immediately.


    Recipe for Coffee Custard

    Ingredients:
  • 4 tablespoons custard powder
  • 5/8 cups whole milk, divided
  • 5/8 cup white sugar
  • 7 tablespoons strong brewed coffee
  • 1 egg yolk
  • 1 egg white

    Method:
    1. In a small bowl, mix together the custard powder and 1/2 cup of the milk; set aside.
    2. Sprinkle the sugar into a saucepan over medium heat. When the sugar begins to caramelize, add the remaining milk and coffee to the pan, and bring to a boil. At this stage, the caramel will become very crusty.
    3. Reduce heat to low, and cook until the sugar dissolves, for about 5 minutes. Stir in the custard powder mixture, and cook, stirring until the custard thickens. Remove from heat, and whisk in the egg yolk.
    4. In a clean glass or metal bowl, whip the egg white until soft peaks form. Put the egg white carefully into the custard mixture. Transfer to a serving dish and refrigerate until firm.
