Father’s Day Recipe: Coffee Honey Cake
Ingredients:
- 4 Eggs
- 1/2 cup shortening or oil
- 1 Lemon (juice)
- 1 Orange (juice)
- 5 cups Flour
- 1 tsp Baking Soda
- 3 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/2 tsp Cloves
- 1/2 tsp Nutmeg
Coffee Honey Mixture:
1 cup Strong, Black Coffee
1 cup Honey
1 cup Brown Sugar
1 cup Granulated Sugar
1 cup Chopped Nuts (optional)
Method:
1. Beat eggs well and add melted and cooled shortening or oil.
2. Add fruit juices.
3. Add pre-sifted dry ingredients alternately with coffee-honey mixture.
4. Bake in a 9" x 12" loaf pan in a moderate oven (350 degrees) about 1-1/4 hours.
Father’s Day Recipe: Strawberry Muffins
Ingredients:
- 2 1/2 C Flour
- 2/3 C Sugar
- 1 T Baking soda
- 3/4 Ts Cinnamon
- 1/2 Ts Salt
- 2 C Fresh strawberries, sliced
- 1 C Buttermilk
- 1/3 C Butter - Melted
- 1 1/4 Ts Vanilla extract
- 1 Egg - Slightly Beaten
- 1 Egg white - SlightlyBeaten
- Vegetable cooking spray
- 1 1/2 Tb Sugar
Method:
1. Mix flour, sugar, baking soda and cinnamon in a large bowl, and mix well.
2. Add fresh strawberries; stir well, and make a well in center of mixture.
3. now mix buttermilk and butter, vanilla extract, egg, and stir well.
4. Add to dry ingredients, stirring just until moistened.
5. Divide batter evenly among 18 muffin cups coated with cooking spray; sprinkle 1 1/2 tablespoons sugar evenly over muffins.
6. Bake at 350F for 25 minutes or until a wooden pick inserted in center comes out clean.
7. Remove from pans immediately; let it cool.
Father’s Day Recipe Mocktail: Mock Pink Lady Cocktail
Ingredients:
- ¾ cup milk
- 1tbsp lemon juice
- ½ tbsp grenadine
- 1 tbsp sugar
- 4 ice cubes
Method:
Pour milk, lemon juice, grenadine, sugar and ice cubes into a blender. Blend until ice has been crushed and melted. Serve immediately.
