Easter Wheat Pie Recipe

Easter Wheat Pie Recipe—truly yummy and delicious! Apart from being tasty and mouth-watering, it is also has nutritional value due to its pure wheat content. Easter Wheat Pie Recipe is also traditional Easter desert since years. All your friends and relatives will love to enjoy this desert even after their heavy dinner or lunch. This Easter Wheat Pie Recipe is also termed as ‘labor of love’ by some of the people since it requires overnight or (maximum 24 hours) soaking time for wheat and chilling of the wheat dough. Ingredients Required
Wheat Preparation: You need wheat that is properly sieved and you need to soak overnight cooked wheat. You also require whole milk and butter.

Ricotta Filling: For this, materials required are eggs, sugar, whole milk ricotta cheese and freshly grated lemon without skin.

Cream Preparation: For preparing the cream, you need whole milk, egg yolk, sugar, all-purpose flour, freshly grated lemons without rind/skin or instead you can also use candied citron peel.

For Making the Crust: You need butter, egg yolk and whole eggs too, all-purpose flour, sugar, and grated lemon while the skin is removed.
Process
A day before for Wheat Preparation, you should take wheat and cook it for about fifteen minutes. Then, remove it and let it soak for 24 hours. And before using it, you need to drain the water in which it was soaked. And most importantly, while cooking, you should take care that the wheat berries are opened or they are tender and chewy.


For Crust: You need to mix flour, grated lemon and sugar together. Then, add butter to it and mix well. Then, add eggs and blend well with a spoon. You will have to really knead well so that the flour leaves the bowl. Then, make small balls and wrap in plastic and let it chill for half an hour.

For Cream: Take a double boiler and fill it enough water so that its insert doesn’t quite touch the water. Slowly on a medium flame bring it to boil. In another pan, mix whole milk, egg yolk, sugar, lemon peel, citron, and flour together and transfer it to the double boiler. Cook this cream in steam; however, being careful enough to stir it continuously so that it doesn’t burns. When the consistency of the cream has become quite thick, remove it and allow the cream to cool.

For Wheat: Take the soaked, cooked and drained wheat in a pan and add milk and butter. Cook for a minute and let the butter melt. Then remove it and let it stand for sometime.

Preparing Pans: Take a board and sprinkle flour on it. Then roll out the chilled dough and line the bottom and sides of two lightly buttered glass cake pans.

Ricotta Filling: For this, mix ricotta, eggs, sugar and lemon peel together in a large bowl. Beat the mixture with a wooden spoon, until smooth and creamy. Then, add the ‘cream’ mixture and the wheat mixture to the ricotta filling, stirring until all is well blended.

Actual Making: After mixing and blending everything well, pour this filling into the prepared pans. Now, bake the pies in a preheated oven for about forty-five minutes or until the bottom of the crust is light brown. And the top is golden. Remove from oven and let the pies cool. After completely cooled, cover loosely with plastic cover and chill until served. For decoration, you can lightly sprinkle the pie top with powdered sugar.

Easter Wheat Pie Recipe Tip: It is advisable that it is best to serve this pie directly from the pan, as if you try to plate the whole pie, it becomes a real trouble and is more than its worth, and can also cause breakage.
