Cauliflower au Gratin
Ingredients: Pieces of cauliflower, chopped onion, milk, water, cashews, ground nutmeg, chopped garlic, olive oil, breadcrumbs, salt, pepper and paprika as per the taste.
Process: Combine Cauliflower and onions in a baking dish. Then, blend properly until smooth all the ingredients like milk, water, cashews, salt, pepper, nutmeg, and garlic. Pour this mixture into a saucepan and cook over the low heat continuously stirring. In the meanwhile, in another pan, heat the oil and add or whisk in the flour. Then, put the heated milk mixture into it. Then, pour the sauce over the vegetable, i.e., cauliflower and onion. Toss properly so that the sauce is coated over each piece. Sprinkle it with breadcrumbs and paprika to make it spicier and tasty. Then, finally bake it for an hour, but keep checking it in between.
Spring Vegetable Mix
Ingredients: you need Fresh fava beans (of lima beans) that are shelled, olive oil, unsalted butter, chopped shallots, salt & pepper to taste, trimmed sugar snap peas, trimmed and cut asparagus, finely chopped or grated lemon zest and fresh lemon juice.
Process: In order to make this really fresh and spicy vegetable mix, first of all you will have to blanch fava beans in boiling water for one minute; cool in ice water then place in a bowl and set aside. Then, take a pan and put butter and olive oil in equal quantities. Add chopped shallots to it and sauté it until tender and cooked. Then remove it. Your next step will be to sauté peas; and then season it with salt. When you notice that the peas are crisp tender, add to shallots. Again, add remaining oil and butter and sauté asparagus; season with salt. When asparagus is crisp and tender, add the fava beans and then again let it stay, for say, couple of minutes. And now is the time to add back the shallots and peas along with zest and lemon juice; season with salt and pepper and heat it for sometime. Your delicious Spring Vegetable is ready to be served.
