Potato Easter Soup recipe
Ingredients

1 cup sour cream
3/4 pound cooked ham
5 medium potatoes
3/4 pound cooked Polish sausage
1 quart buttermilk
Salt and pepper to taste
1 tablespoon flour mixed with water
2 tablespoons grated horseradish
5-6 eggs
Method: First heat buttermilk on very low heat until cheese sets on top. Cool off and strain in a fine strainer. Use the watery part (whey) only. Take 4 cups water and cook potatoes in it. When the potatoes are boiled add sliced sausage, cubed ham, whey and horseradish. When the mixture starts boiling add flour to it. Add sour cream and bring to boil for 1 minute. Boil 6 eggs. Slice into the soup after soup cools off a little. Your soup is ready. Serve it hot.
Sicilian Easter Soup recipe

Ingredients

1/2 pound ground beef
3 cups chicken broth
1 tablespoon chopped parsley
1 egg
1/3 cup bread crumbs
1/2 teaspoon salt
2 teaspoons grated Romano cheese
1/8 teaspoon pepper
1/4 cup water
1/4 teaspoon pepper
3 eggs
1 tablespoon grated cheese
1/2 pound ricotta
1 tablespoon parsley, chopped
Salt according to taste

Method: Put broth and water into a large saucepan over medium heat. Then make a mixture of egg, ground beef, parsley, cheese, bread crumbs, salt, pepper and form into small meat balls. Drop these meat balls into the boiling broth. Let simmer for 3/4 hour. In a small bowl, whip the eggs. Add the ricotta, cheese, salt and pepper to the bowl. Blend well. Then add the cheese and pepper mixture to the boiling soup. Simmer for 10 minutes longer. Your soup is ready.
