Easter Egg Sandwiches
Ingredients:
5 cooked eggs, peeled and chopped
1/4 cup chopped green pepper
1/2 cup finely chopped celery

2 tablespoons finely chopped green onion
1/2 cup mayonnaise
Pepper according to taste
Salt according to taste

Cooking Directions: Mix all ingredients and spread on bread evenly.
Egg Salad with Bacons
Ingredients:
12 Hard-cooked eggs peeled & chopped
1 cup Mayonnaise
5 green onions sliced
1/2 cup parsley chopped
6 Ribs celery chopped
12 ounces bacon cut in 1" squares then cooked crisp & drained
5 tbs prepared white horseradish and drained
Salt & freshly ground black
Pepper to taste

Cooking Directions: First gently toss the eggs, bacon, celery and scallions together in a medium-sized bowl so that the ingredients combine well. Mix the horseradish and mayonnaise and spread it over the salad. Sprinkle salt & pepper. Garnish with parsley.
Easter Ham Sandwiches
Ingredients:
Chopped ham
Slices of bread
1 egg
1/2 cup milk
Cream
Cooking Instructions: Firstly, beat together the egg and milk in a small bowl. Set aside the bowl. Spread a little cream with chopped ham. Spread a layer of ham between two pieces of bread. Then gently dip the sandwich in the egg-milk mixture. Fry dipped sandwich on a buttered pan until both sides are golden brown.
