Mushroom Soup
Ingredients:
6 cups beef or vegetable stock
2 1/2 cups stock
1/4 cup butter

1/3 cup flour
2 medium minced onions
24 ounces sliced white mushrooms
Freshly ground black pepper
1 tablespoon crumbled dried thyme
2 cups white wine
2 ounces mixed dried mushrooms
Salt according to taste

Method: Firstly put the dried mushrooms in a small bowl and then pour the stock in it. Let the mushrooms soak for 25 to 30 minutes. Then squeeze the mushrooms well and press out all of the liquid. Don’t throw away the liquid; reserve all of the soaking liquid. Finely chop the mushrooms and set aside. Melt the butter in a pan. Add the onions into the butter and cook for 5 minutes, stirring occasionally. Then add the white mushrooms, salt, dried mushrooms, pepper, and thyme. Cover and cook for 10 minutes, stirring occasionally. Then open the lid and cook for 5-10 minutes or until all of the liquid has been absorbed. Sprinkle the mixture with the flour and mix well. Cook for a few minutes then put some wine. Cook over high heat for 5 -7 minutes, stirring at regular intervals. Add the stock and reserved soaking liquid. Bring to a boil then reduce the heat to medium low. Simmer for 20 minutes. Serve immediately.
Baked Ham with Champagne
Ingredients:
1 pound boneless ham
2 bottles extra dry champagne
3 tablespoons honey
1-1/2 teaspoons ground ginger
1-1/2 teaspoons dry mustard
Light brown sugar
Salt according to taste
Method: First score ham and place it on a rack in the oven. Then spread 1 cup brown sugar and pour over champagne over the ham. Blend well the remaining bottle champagne, remaining brown sugar, honey, ginger, and mustard and bring to rolling boil in saucepan. Lower heat and simmer while basting ham every 10 minutes until done.
