Basic Vanilla Cake sponge


You need:
  • Unsalted Butter: 2 sticks (softened)
  • Flour: 3cups
  • Baking powder: 1tbsp
  • Salt: ½ teaspoon
  • Castor Sugar 1 ½ cups
  • Eggs: 4
  • Vanilla Extract: 1tbsp
  • Cream(heavy): ¾ cup
Instructions:
  • Preheat the oven to 350 degrees F or 175 degrees C.
  • Grease two 9” round cake pans and line the bottom with butter paper.
  • Grease the butter paper and dust the pan with flour.
  • In a bowl, whisk 3 cups flour, baking powder and salt.
  • In a large bowl, beat butter and sugar with the help of an electric mixer on medium speed until light and fluffy.
  • Reduce the speed of the mixer and add one egg at a time.
  • Add vanilla extract after all eggs are done.
  • In a liquid measuring cup, mix cream with half cup of water.
  • Beat the flour mixture into the butter mixture. Add cream mixture in this mix until just smooth.
  • Divide the batter between the prepared pans.
  • Bake for 25 to 30 minutes or until golden crust appears on the top of the cake sponge.
  • Transfer on wire rack and let cool for 10 minutes.
  • Run the knife around the edge of the pans and remove the cake on a wire rack and cool thoroughly.
