Arbor Day Recipes



Arbor Day recipes essentially contain food, which are healthy and easy on the earth. Arbor Day is all about plating trees and taking care of nature, to make it better. Apple Chicken Salad

Ingredients
  • 1/2 cup yogurt
  • 1/2 cup apple jelly
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • 2 cups finely sliced celery
  • 1/2 cup chopped pecans
  • 3 apples, diced with peel
  • 3 cups cooked chicken, diced
Procedure:

Take a large bowl; mix the orange juice, lemon juice, yogurt and apple jelly. Now, put in the celery, apple and chicken in the bowl; toss to coat all the apple pieces, with the mixture. Chill for sometime and before serving sprinkle pecans on top.


Royal Avocado

Ingredients
  • 1/2 cup yogurt
  • 1 chive
  • 1/2 tomato diced
  • 1 hard boiled egg
  • 1 half ripe avocado
  • A splatter of hot sauce
  • 3 soup spoons of olive oil
  • 3 small red onions, sliced
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon sweet onion mustard
Procedure:

Slice the avocado lengthwise and take out the seed. Take the blender, and put all the other ingredients there and blend it for a few seconds, 10-15 seconds should be enough. Now, pour this mixture, inside the empty halves of the avocado and serve.


Vegetable Chips

Ingredients
  • Kale
  • Salt
  • Carrots
  • Olive oil
  • Potatoes
  • Parsnips
Procedure:

Keep the oven heated at 400 F. Next cut all the vegetables, into thin pieces and put them in a mixing bowl, along with a little olive oil. Shift all the vegetables to a big cookie sheet, which has been greased. Sprinkle some salt on top of the vegetables and then bake it. Check from time to time to find out, if the pieces have been baked properly or not. Turn the pieces over if required, cook it till it is uniformly done and turns brown and crisp. After the vegetables are done, transfer them to a paper towel, for absorbing any excess oil, before serving.
